Our minimum batch is 25 pounds of uncooked meat. To the right are the recommended ratios for meats we commonly process. Although we recommend pork to keep the correct moisture content we also have other options available. Our custom smoke products are hand crafted in single batches so you will always get the meat you bring in back. Below are our most common selections, but if you have a special request we will be happy to accommodate. Turn around times are currently 1-2 weeks.
